Note, I used no oil or butter in the pan. That glossiness is -just- from the steak& #39;s own fat.
Test Steak turned out great. But it& #39;s super rich.
To pair with it I made potatoes in a mustard scallion vinaigrette, and a salad with cherry tomatoes, corn, pickled onion and cucumber in a suuuuper light version of a caesar dressing.
