Fold from beneath on two opposing ends, pulling dough from bottom and folding over the top. Then we wait another 10 mins. (The dough is very wet still at this stage so having slightly wet hands helps it not stick like a jerk - and makes sure you’ve rewatched your hands!

Boy, this bread better work out, eh? I haven’t actually made ciabatta in this oven and I’m suddenly imagining this thread ending with a horribly charred and blackened loaf
